It’s not just wordplay, but you have to admit “breakfast cookies” sound better than “squat chewy muffins” — right?
Start with your favorite healthy muffin mix — we used Krusteaz brand blueberry muffin mix this time. It has few preservatives and comes with a can of little wild blueberries. Any box mix would work.
Add 3/4c quick cooking oats, 1/2 cup butter, chopped toasted almonds, an egg, cranberries if desired, and a sprinkle of mini chocolate chips so the kids think they’re getting a treat.
A sprinkle of wheat germ, flax seed oil, or toasted walnuts would also boost nutritional value. Add fruit and almond milk. Serve them after school, toss one in the lunch bag for the bus ride home. Enjoy!
